About the Winery: Set in a 20-hectare estate, deep among the green slopes of the Berici Hills, stands an 18th century villa named after the Rezzadore family, who have been making wine here for many generations. The Berici Hills, for millions of years at the bottom of an ancient ocean, are made up of limestone, containing many fossilized flora and fauna as well as volcanic rocks, as in the nearby Euganei Hills. The nature of the soil, plus its constant exposure to the sun, and the spur-cordon farming technique with denser planting and a lower production per sector, guarantee a greater salinity and flavor to the wine.
The stables, barns and other old farm buildings have recently been renovated and converted to house the winery where the most modern equipment has been installed to guarantee the minimum stress to the grapes. The grapes are soft pressed by pneumatically controlled equipment and the vats are in stainless steel for temperature-controlled fermentation, all of which allow the retention of the flavors and aromas that make the wine special.
About the Wine: Dry and sprightly, with a fine, delightful, utterly inoffensive mousse, it strikes a balance between fruit and acidity, balancing apple, limeflower, lemon and pear (with notes of kiwi and honeydew melon) against fresh acidity and lively bubbles. Textured in the mouth, with a richness carried easily on a backbone of limestone minerality, it finishes with an intriguing pear-brioche blend. Rezzadore farm their vineyards in the Berici hills of the Veneto organically, and wild pheasants, like the one on the label, roam freely among the grape vines.
