About the Winery The Ott family has been growing and producing wine in the region of Wagram in Lower Austria since 1889. Bernhard Ott is of the fourth generation and has managed the winery since 1995, when he took the helm from his father, expanding the estate to 28 hectares in Feuersbrunn and Engabrunn. After assuming control at the winery, Bernhard worked meticulously to improve the family estate. He improved the cellar with new stainless steel tanks, began bottling everything under Stelvin closure and started enforcing his own personal philosophy – being as true to nature as possible. Bernhard has converted many of his vineyards to biodynamic cultivation, certified biodynamic by RESPEKT, and has taken steps at the winery to reflect this philosophy. Bernhard is extremely diligent in his vineyard work; he adds compost and preparations to the soil rather than fertilizing individual vines, uses cover-crops and biodynamic tinctures and homeopathic remedies to treat vineyard problems. In keeping with the philosophy of the biodynamic approach, work in the vineyards and cellar is done in a holistic and lopped system. Ott found that after switching to biodynamic farming, he was able to harvest grapes from his vineyards several weeks earlier than he had in the years prior to his switch to this biodynamic viticultural approach. About the Wine After the grapes were handpicked, they were macerated for some hours, followed by fermentation and aging in stainless steel tanks until February of the next year. Upon first sip, the wine delivers the foundation of Bernhard’s true terroir-driven efforts. With aromas of cool herbal notes followed by ripe Granny Smith, expect a mouthfeel that is appealing. This wine is extremely well balanced and not only gives some spice, such as black pepper and a hint of chili, but also expect fresh meadow flowers and minerality. Brimming with juicy fruit on the palate, it has good structure, contoured and compact, gripping bite, and medium finish. * * * 2018 Molly Dooker Enchanted Path McLaren Vale Australia Shiraz Cabernet Sauvignon Blend Normally $89.99–$76.49 15% Off This Week ONLY! About the Winery After years of working in the industry for others, in March 2006, Sarah and Sparky Marquis’s tale of love, hard work and determination led them to start their own brand, Mollydooker (meaning ‘Left Hander’ in Australian slang). The plan was to create a range of wines that were housed by beautiful packaging and design, with dashes of color and images that would tell a story. The Marquis Philips brand was a runaway success, growing from 8,000 to 120,000 cases in just four years. There was even talk of growing even bigger until one day, Sarah and Sparky took stock and decided that this was not the life they wanted to lead. They loved the vineyards, loved making wine and loved sharing with friends. They didn’t want to become corporate and they didn’t ever want to compromise on quality. So, they decided to go it alone, staying small and hands-on. For example, if the grapes are not up to their standards one vintage, they just won’t produce that wine for the cuvee or vintage. In the 2008 vintage they only bottled their Lefty wines and in 2015, they only bottled their Lefty and Family wines. This is a true testament to their commitment to quality and honoring their customers who spend their hard-earned dollars on wine. Fast forward to 2017 and as is the case with any good story, as one chapter comes to an end another one begins. These days, Sarah and Sparky are pursuing their own ‘Enchanted Paths’, with Sarah taking the reins as sole owner and winemaker, now running the business with the support of the very talented and experienced Mollydooker team. About the Wine Starting early March, the 2018 Vintage can be defined by the even ripening that lead to great fermentation conditions. The grapes came into the winery at a steady pace with excellent color and breadth of flavur shown as soon as the fruit was first crushed. Ferments were easily controlled allowing efficient extraction of tannins and flavors from the skins during pumpovers. Malolactic fermentation moved quickly during the oak maturation phase to reveal the intensity and depth of character of the wines which will be the hallmark of 2018 Vintage. An amazing culmination of Shiraz and Cabernet, the 2018 Enchanted Path has an intriguing nose of pomegranate, cherry and anise. The first sip brings a chorus of flavors that include blackberry and plum with vanilla and dark chocolate notes. Fine yet broad, the tannins create a smooth mouthfeel that carry the complex layers of flavor. Developing in the glass, the 2018 Enchanted Path truly lives up to its name. * * * Also Tasting Today: 2018 Cavallotto Bricco Boschis Langhe Nebbiolo $37.99 About the Winery
The Cavallotto family is the chief owner of the beautiful Bricco Boschis cru in the Castiglione Falletto district, where they have been growing Nebbiolo since 1929 and bottling their own wine since 1948. These richly structured wines place emphasis on elegance and longevity, attributable to excellent vineyards in the Bricco Boschis and Vignolo crus and traditional long maturation periods in large Slavonian-oak casks. Alfio, Giuseppe and Laura Cavallotto successfully continue the family tradition started five generations ago, expertly transforming the grapes grown exclusively from their holdings into the most classic expressions of Castiglione Falletto! Steadfast devotion to tradition combined with a high regard and respect for modern viticultural and winemaking techniques result in complex and elegant Baroli that are released for sale only when they have acquired perfect maturity. The estate produces three Baroli: two riservas and their anything but “regular” Bricco Boschis. The Vignolo cru, sloping 60-80 meters lower in altitude than the adjacent Bricco Boschis holding, shows a “creamy” flesh. The estate’s selection of the finest vineyard within the Bricco Boschis cru is San Giuseppe, the epitome of Castiglione Falletto: a powerful, majestic wine of absolute authority whose sweetness comes with time. About the Wine
100% Nebbiolo from Bricco Boschis (including Vignolo and San Giuseppe), harvested during the second week of October. The grapes were fully de-stemmed then fermented with indigenous yeasts in the traditional style, with a semi-submerged cap using punchdowns and pumpovers for 18-30 days. The next spring, the wine undergoes secondary fermentation in cement tanks; followed by cask ageing for 18 months in Slavonian oak botti.
Critical Acclaim “Cavallotto may very well be the greatest Barolo producer few people have ever heard of, something that continues to mystify me. Truth is, it isn’t just the Barolos here that are impressive, the entry-level wines are every bit as delicious and well-priced…Readers who appreciate a firm, classic style of Barolo will want to spend some time getting to know Cavallotto.” – Antonio Galloni, The Wine Advocate “These are classic bottles to the core, the result of rigorous management in the vineyard and long maceration in the cellar.” – Gambero Rosso Italian Wines 2010 * * * Cocktail Recipe of the Week: White Christmas Margarita Ingredients: 1 1/2 cups frozen cranberries 1 cup Cimarron Blanco Tequila 2/3 cup fresh lime juice (from about 6 limes), plus 4 lime slices, for serving 6 tablespoons Giffard Curacao Triple Sec 3 tablespoons unsweetened coconut milk 3 tablespoons superfine sugar 1/2 cup light corn syrup 2 tablespoons extra-fine shredded unsweetened coconut Kosher salt Directions: 1.
