About the Winery

Natives of northern France, Julien Zernott and his wife, Delphine Rousseau, wanted less intense winters and brutally hot summers so they headed south to fulfill their life dream of having vineyards and making wine. Before establishing Pas de l’Escalette, Julien went to wine school in Dijon and capped his work experience with five years in the Loire Valley in the Menetou-Salon cellar, Domaine Henry Pellé. Together Julien and Delphine craft some of the most precise and unexpectedly elegant, organic and biodynamically farmed wines in the Languedoc.

Delphine was working in the south and she met Julien when he was working at Henry Pelle. They had little money so they had to go somewhere where they could afford to start something. Through the years of commuting from the Loire Valley to the Languedoc (where Delphine lived) they passed through the Pégairolles Valley, and they knew that was the place. They found eight hectares of vines for sale in 2003, bought them and five years later they quit their jobs and went all-in on their life project.

 

About the Wine

The philosophy at Escalette is simply to focus on farming their vineyards as naturally as possible using organic and biodynamic methods, and do as little as possible in the cellar, save for a severe triage when the grapes arrive and precision with their winemaking. Delphine and Julien maintain more than twenty hectares of vineyards on their thirty-four hectares of land. The age of their vines runs from newly planted to more than eighty years old. All of their new plantings are massale selections and the vines are gobelet trained.

 

The focal grapes at their estate are Grenache, Syrah, Carignan, Cinsault and a tiny proportion of Mourvedre, a grape that is more commonly grown in the hotter areas of the south of France due to its need for a long growing season. (In fact, the only Mourvedre on their property was mistakenly sold to them as Cinsault for one of their new vineyards, Les Frieys. But they liked the result of its contribution to the final wine and decided to keep it.) The principal grapes they use have a natural affinity to demonstrate bright fruit qualities when grown in cooler climates and are fantastic transmitters of terroir specificity—all defining features of the Escalette style. Vinified like a white wine, Ze rozé stands out for its crisp elegance and drinkability.

About the Winery 

Vilafonté is the first American and South African joint wine-making venture. This ground-breaking red wine project is a partnership between a respected group of wine specialists from South Africa (Mike Ratcliffe) and the United States (Zelma Long and Dr. Phil Freese). The name Vilafonté is derived from the primary soil type of the 100-acre estate. Vilafonte is located in the Paarl-Simonsberg region on the northern side of the Simonsberg Mountains. Annual rainfall in the area is approximately 500 mm (20 inches) with gravelly clay and well-weathered soil. The “Vilafontes” soil type is the namesake for the vineyard and the wines. The area is gently sloping with a northwesterly facing topography, and all of the rows run parallel to the downhill slope.  The soil in these vineyards has been recorded as one of the oldest soil types in the world—somewhere between 750,000 and 1.5 million years old. The character of the soil is what forms the foundation of Vilafonté wines. It has deeply evolved over the centuries, and has been stripped of much of its inherent capacity, which encourages smaller vines, lower yields and highly concentrated fruit.

About the Wine

Called “your everyday vilafonté”–Every hectare of vine on Vilafonté is meticulously farmed and harvested, with an attention to detail and singular focus. This intense scrutiny, carried through to our blending process in the cellar results in certain barrels not fully utilized in the individual iconic Series wines.  This second label, Seriously Old Dirt, is a wine named after the ancient vilafontes soils in which their vines have been growing for almost two decades. When first poured, the 2017 Seriously Old Dirt exhibits vibrant ruby hues, with touches of deep garnet-red. Fresh aromas of black cherry, plums, and berries are matched by notes of spices such as cinnamon and white pepper. When sipping, the palate will be excited by the layers of freshness with notes of juiciness and an impressive mouthfeel. The tannins are integrated very well, giving a finish that is focused yet great in length. 37% Malbec, 36% Merlot, 26% Cabernet Sauvignon, 1% Cabernet Franc.

Cocktail Recipe of the Week: 

Margarita Jello Shots 

Ingredients:

3 c. limeade
4 envelopes gelatin
3/4 c. Cimarrón Blanco Tequila 
1/4 c. Cointreau
Lime wedge, for rim
Coarse salt, for rim

Directions:

In a small saucepan, add limeade and sprinkle over gelatin. Let bloom, 2 minutes. Turn heat to medium and whisk until gelatin is dissolved. Remove from heat and stir in tequila and triple sec.
Transfer mixture to large measuring cup and divide between small plastic jello shot glasses. Place in refrigerator until set, about 2 hours.
When ready to serve, run a lime wedge around the rim of each shot glass and dip into coarse salt.

Snack of the Week:

 Ewephoria Sheep’s Milk Gouda

The punny name that only makes sense in English should give it away; this cheese was invented for the American market's infamous sweet tooth. Presumptuous - if only the butterscotch sweet, nutty result wasn't so gosh darn successful. And there's an upside to a focused market; the single producer of pasteurized milk is much smaller than most export sources - the farmer's wife posits that the sheep 'eat better than her children' on lush pasture surrounded by a nature preserve. The crunchy stuff makes a blissful snack with drinks like Sherry or Porter and is delicious melted on pies or dessert breads.
