About the Winery There is a revolution happening in the Douro, and Dirk Niepoort is leading the troops. For centuries this part of Portugal has been known only for its port, but today, many of these Portuguese winemakers are beginning to make red table wines with the same grapes that have traditionally only been used for ports. Dirk was born in 1964 to a traditional Port family that has been in business since 1842. The first wine Dirk participated in making was the Niepoort Vintage Porto of 1987. Since then, he took over the firm management and started making dry wines. The Niepoort house still keeps a complete line-up of Porto wines, ranging from Tawny to Colheita and Garrafeira (a tawny aged in 10L glass bottles, that only Niepoort makes), and from Ruby to Vintage. The dry wines include whites Redoma and Redoma Reserva, and reds Vertente, Redoma, Batuta, and Charmes. In addition, he is also at the head of the Lavradores project. Wine & Spirits magazine named Dirk as one of 50 "Most Influential Winemakers of 2004," saying that "what sets Niepoort apart is his skill at building networks, pathways of communication. Over the last fifteen years, the Douro may have produced an increasing range of great table wine, but the wines have remained a Portuguese phenomenon. Niepoort has actively worked to raise their visibility. Furthermore, the same magazine named Niepoort "Winery of the Year." Ray Isle wrote, "[Niepoort's] wines, while being some of the best the Douro has to offer, unfortunately haven't gotten as much attention in the US as they deserve — in part because quantities are so extraordinarily limited. About the Wine The vineyards for this wine are in the prime Cima Corgo zone in the Pinhao valley at very high altitudes. Situated on Schist soils, these 40+ year old, high altitude vineyards are 1,312 to 2,296 feet above sea level on the right bank of the Douro river. All farming is done organically and by hand. The predominant varieties planted in this field blend white are: Rabigato, Codega, Arinto, Viosinho, Boal and Gouveio. After harvest the grapes are transported in cooling trucks to the winery where the grapes are quickly crushed at night without maceration at low temperatures. The wines then ferment spontaneously in French oak casks without malolactic and without batonnage. After fermentation the wine is aged for ten months in barrel on fine lees before bottling. About the Winery The 30 hectare (75 acre) vineyard is planted predominantly with mature (25yr+) Grenache and (40yr+) Syrah. Over the last decade they have added smaller quantities of other traditional Rhône varietals such as Roussanne, Marsanne, Viognier, Clairette (whites) and are planting Mourvèdre (red) to complement the classic Rhône base. Chene Bleu is blessed with a confluence of natural factors. Being so far south, on the same latitude as Gigondas, they experience more than 300 sunny days in the year. The fruit ripens deliciously and does not suffer from rot. The vines enjoy regular exposure to the Mistral and other winds that assist in flavor concentration, but our hilly topography spares us from the full force of the blast and the local mini-tornadoes. The idyllic high-altitude, geologically complex vineyard is enhanced by the most exacting no-shortcuts natural practices. Hand-picking and double-sorting result in deliberately tiny yields and superlative fruit quality. About the Wine This rosé blend comes from vines that range from 25-40 years old. Situated in very stony, clay, and limestone soils, the Chêne Bleu rosé is a true winner. The pale pink hues result from a delicate, cool temperature skin contact during maceration, which the team uses to extract maximum aromas and flavors from the grapes before pressing. Rich and intense, mango and exotic fruits are balanced by a delicate red currant and blueberries. Structured, balanced and complex, this is a versatile food wine, ideally suited to be enjoyed with grilled seafood, roast chicken, fresh lobster, lightly spiced dishes or tender lamb. Pineapple Jalepeño Margarita Ingredients: 2 tablespoons sugar 1 tablespoon ground black pepper 3/4 ounce Cointreau 1 1-inch pineapple chunk, cubed 1 jalapeño round, thinly sliced 1 1/2 ounces Herradura Reposado Tequila 1/2 ounce lime juice, freshly squeezed 1/2 ounce pineapple juice lime wedge, for garnish pineapple chunk, for garnish jalapeño round, for garnish Directions: Combine the sugar and black pepper in a shallow dish. Wet the rim of a rocks glass with the slice of lime, and gently rotate the rim into the sugar and pepper mix to coat the edge of the glass evenly. Set the glass aside. Add the triple sec, pineapple chunk and jalapeño round into a shaker and gently muddle. Add the tequila, lime juice and pineapple juice into the shaker with ice, and shake until well-chilled. Double-strain into the prepared glass over fresh ice. Garnish with a lime wedge, a pineapple chunk and a jalapeño round.
