About the Winery Domaine Olga Raffault is unquestionably one of the long-time reference points for top-quality, traditional Chinon wines. Its history is intriguing. Olga and her husband Pierre operated the estate together until he died unexpectedly just before harvest in 1947. Alone with two small children, Olga was left to run the business but was ably assisted for the vintage by employee Ernest Zenninger, a German prisoner who had found refuge and work at Raffault at the end of the war. Ernest stayed on, becoming the winemaker and working closely with Olga’s son Jean Raffault. The two of them ran the estate as a team for decades, under Olga’s watchful eye, until her death a few years ago, now Jean’s daughter Sylvie and her husband Eric de la Vigerie currently run the vineyard. Through the generations, the winemaking has remained traditional, allowing the superiority and expression of Raffault’s sites to shine through. Raffault is in the Véron, a wedge-shaped strip of land where the Vienne River intersects with the much larger Loire. Véron is temperate, humid and low-lying, with some small hills, and two main types of soil, one gravel-based and the other clay-limestone-based. Raffault farms parcels totaling 24 hectares of vines--23 planted to Cabernet Franc and 1 to Chenin Blanc—with vines averaging about 30 years. The farming is Certified Organic and harvest is manual. This minimalist approach in the vineyard extends to the cellar. About the Wine When poured, reddish pink hues appear with bright, fresh aromas. On the palate, expect a creamy-textured mouthfeel accompanied by fresh red fruit flavors, such as newly picked strawberries and raspberries. With terrific mineral content and good acidity for structure, this rosé is extremely well balanced and finishes beautifully. The Cabernet Franc vines are situated on a south-facing, limestone-rich slope on the highest hill in the area. About the Winery Nicolas-Jay is a collaboration between two long-time friends–famed Burgundian winemaker Jean-Nicolas Méo of Domaine Méo-Camuzet, and visionary music entrepreneur and wine-lover Jay Boberg. In 2011, Jay approached Jean-Nicolas with the idea of starting a small winery in Oregon. Jean-Nicolas had been making wine at Méo-Camuzet for almost 25 years and was very intrigued and excited by the idea of working with Pinot Noir in a new terroir. Knowing that the wines of Nicolas-Jay would be defined by the vineyards, Jean-Nicolas and Jay began a lengthy exploration of the Willamette Valley. They established relationships with some of the finest vineyards in the AVA, and even purchased the Bishop Creek Vineyard in Yamhill-Carlton AVA, after being blown away at a tasting by the expressiveness of the site. With a focus on freshness and balance, Nicolas-Jay is often one of the first wineries to harvest the vineyards it partners with. Nicolas-Jay uses the same coopers and barrels that Jean-Nicolas selects for his Méo-Camuzet wines. About the Wine The fruit is sourced almost exclusively from biodynamic, organic and LIVE certified vineyards all over the Willamette Valley; the unique sites include vineyards located in the high-elevation Eola-Amity Hills, the foothills of the cool coastal range in the McMinnville AVA, the warm red-soiled vineyards of the Dundee Hills and the expressive Bishop Creek Vineyard in the Yamhill-Carlton AVA. The grapes are 100% destemmed and pressed very slowly and at low pressures to accentuate pure fruit and silky mouthfeel. During aging, 33% new French oak barrels are used. 2,400 cases produced.

The cherry and floral notes build steadily through a very long, penetrating finish that's supported by chewy, slow-mounting tannins. Stellum Cask Strength 114.48 Proof Bourbon 5-6 mint leaves 1 tsp. sugar Directions: Place mint leaves in the bottom of a pre-chilled, dry pewter cup. Add sugar and crush slightly with a muddler. Pack glass with finely cracked ice, then pour a generous 3 ounces of Kentucky bourbon over the ice. Stir briskly until the glass frosts. Add more ice and stir again before serving. Stick a few sprigs of mint into the ice to get the aroma.
