About the Winery

Podere Salicutti is a gem of an estate located in Montalcino and one of the leading figures in the tiny, yet burgeoning “Natural Wine” movement in Brunello appellation. It is run meticulously by Francesco Leanza who left his career as a chemical engineer in Rome to dedicate himself full-time to Podere Salicutti in 1995. Leanza originally purchased the property in 1990 and immediately began reviving the olive grove and renovating the building on the estate. A few years later, he set out to revive the vineyards, which he had begun replanting in 1994. The name Podere Salicutti comes from a stream that runs through the southern boundary of the property. With an elevation of about 1,500 feet above sea level, the terroir is facing south to protect from the northern winds of Mistral and Tramontana. The soil below is a mixture of clay and calcareous sandstone, which creates a flakiness and refiner for the vines. 

Leanza believes that the value and the meaning of his personal relationship to the vineyard can be summed up using two metaphors: the garden and the clock. The garden must be cared for and respected like the vineyard. There must be an absolute precedence to manual labor rather than mechanical work, by manually tending every single vineyard. Each vine has a uniqueness and there should be a respect for the characteristics of every harvest. The garden must be wholesome and therefore organic. The clock beats to the rhythm of life. When the time reaches August, the heat stabilizes its foliage and the vine has found its balance. Leanza begins to calmly start thinking about its fruit, which slows down his rhythm of time. As each phase of the winemaking process occurs, Leanza's paternal responsibility threshold becomes greater–this is why Leanza is the first certified organic winemaker in Montalcino

About the Wine

Hand harvested directly from the Certified Organic, practicing biodynamic vineyard site Piaggione, these vines are situated on calcareous and marl soils. With half of the vineyard planted in 1994 and the other half planted in 2007, the vineyard is oriented south/southeast at approximately 1378-1444 feet in elevation. After manual harvesting, the frapes were fermented in stainless steel with a 12 day maceration on the skins. Aged in in a mix of oak (5HL neutral Allier casks, 40HL Slavonian oak casks, 10-20 HL french barrels) for 36 months followed by an additional 18 months in the bottle.

About the Winery 

Easton Wines was founded in the late 1980s by husband and wife team Bill Easton and Jane O’Riordan. Winemaker Bill Easton began his career in the wine business working for small California wineries. In the late 70's he founded Solano Cellars, a wine shop in Berkeley, California, specializing in small artisan producers from around the world. From years in the shop and traveling extensively in Europe, Bill's palate and style of winemaking developed. He creates wines that are balanced and elegant, with complexity that develops as the wines age in bottle. 

The style of Easton red wines emphasizes deep color, balanced flavors, full middle palate, and a long finish, with power and finesse. They gain complexity with age. The goal for the last 25 years has always been to make the finest wines possible that can be placed on a table with the best wines of the world. Bill and Jane practice sustainability and farm their Fiddletown vineyards organically on steep mountain slopes.

About the Wine

The Cabernet Sauvignon is from the Baldinelli Vineyard which was planted in 1972 on St. George rootstock. This is an old, low bearing, small berry/cluster clone. The growing season is longer and cooler than what many might assume. Red, iron-laden soils of grainy decomposed granite. Warm days moderated by afternoon Delta breezes and cool night air from the High Sierra peaks just 50 miles to the east. Closer to harvest as the days become shorter, fruit cooled overnight takes half the day to warm again and matures slowly. Aging takes place in 100% French Bordeaux barrels, 50% new. The wine is in barrel for two years prior to bottling in the Fall of 2014. It is further aged in bottle for an additional three years prior to its release. 

Color is dark purple, with complex aromas of cedar, tobacco, and asian spice box. The fruit is blackberry/cassis/olive with a pleasant St. Julien-like texture, mineral-infused flavors, and sappiness. The wine has good balance, intensity, a plush texture, and length. It is a youngster now and slow to open, which bodes well for ageability. We think this is the best Cabernet Sauvignon we have made from this site to date.

Cocktail Recipe of the Week: 

Purple Haze

Ingredients:

1 1/2 ounces Our New York vodka

1/2 ounce Giffard blackberry liqueur

2 ounces cranberry juice (more or less)

Optional: fresh mint and blackberries for garnish

Directions:

Pour the vodka and black raspberry liqueur into a cocktail shaker with ice. Shake well.

Strain into an old-fashioned glass filled with fresh ice, and top with cranberry juice. Garnish with mint and blackberries,  Cheers and Enjoy!
