About the Winery In 1925 Manzone Giovanni purchased “Ciabot del Preve” (the Parish Priest house) and he started the winemaking in Monforte d’Alba. During the years the Manzone family purchased significant vineyard sites on the historic hill of “CASTELLETTO” and “GRAMOLERE”. In 2005, Mauro joined his father, and in 2012 Mirella enlisted too, in the management of the winery. Mauro and Mirella graduated from the famed Oenology School of Alba. Giovanni Manzone Winery is located in Monforte d’Alba, Piedmont. The entire production is focused on high- quality and extremely limited quantities. The vineyard is situated between 1100-1600 feet; this extreme steepness and the terroir foster naturally low-yielding vines which produce wines that are approachable while young, yet remain concentrated and long-lived. The family cultivates their vineyards following healthy and sustainable viticultural principles. Natural grass is left between the rows of vines, mowed and left on the ground. All the wines are unclarified and unfiltered. About the Wine Starting harvest in mid/late October, the grapes for the Il Crutin are hand harvested in small boxes in order to avoid crushing. Afterwhich, there is a gentle process of selection and destemming to secure the best quality. The wine is vinified in stainless steel with soft pumpovers for approximately two weeks. The wine is then aged in neutral oak for six months; after it is further aged in tank without clarification and filtrations. When first poured, expect ruby red hues to shine through the glass followed by aromas of delicate florals and red fruits. About the Winery Hourglass is a story of place: the narrative of two dramatic sites and the people destined to create extraordinary wines. Ned Smith had a great vision of producing wine and with his success in the advertising industry, he was able to follow his dreams to Napa Valley in 1964. Ned became a real estate agent, only the second to set up shop in the Valley. Over the next decade, he introduced many aspiring Napa vintners, such as Jack & Jamie Davies (Schramsberg), Dick Grace (Grace Family Vineyards), and Carl Doumani (Stag's Leap) to the estates that would become the iconic wineries of today. There was one particular six-acre property two miles north of St. Helena that captured Ned’s imagination in 1976. Where an outcropping of the Maycamas mountains jutted eastward, the Napa Valley floor was pinched to a near figure eight, and this unclaimed knoll of hillside lay precisely in the narrowest point. Over the past decade, Ned had developed an uncanny intuition about land. He knew at once that this lot, nestled in the crux of the hourglass-shaped valley, was something special. He wouldn’t share it with his aspiring vintner clients; this parcel would be his. Ned planted an orchard on the hillside, hoping to sell the fruit and eventually build a home alongside it. Despite diligent effort, the fruit trees died within a couple of months. Undeterred, he took a cue from his neighbor, Dan Duckhorn, and revised his farming plan. Realizing the site’s intense soils were ideal for grapevines, he planted the varietal he loved, Zinfandel. His four-acre vineyard yielded excellent grapes for nearly fifteen years. About the Wine The HG III is approachable at the pull of the cork. Explosive aromas of black cherry, blackberries and Hoisin mingle with elevated notes of roasted hazelnut and cedar for a seductive perfume. The sensation of blackberry jam, ripe plum and cola nut carry forward on the palate with a mouth coating depth and trailing finish. Merlot, Cabernet Sauvignon and a cadre of Italian Mixed Blacks represent the “III” of HG III: Merlot for a sleek and supple mid-palate, Cabernet for core structure and extended finish, and a secret sauce from the Mixed Blacks for depth and layering. An unmistakable hint of dark chocolate yields a richness that complements the pure black fruit character, while the mouthfeel is decidedly lush. The blend finishes strong with expansive, lingering notes. With cellaring potential, there is ample core structure for this wine to age, however by design it delivers at the pull of the cork. * * * Cocktail Recipe of the Week: Rosemary Maple Bourbon Sour Ingredients: 3 shots Bulleit bourbon 1 1/2 shots fresh lemon juice 3/4 shot dark amber maple syrup 1 large sprig of rosemary (plus 2 small sprigs for garnish) Directions: Crush the large sprig of rosemary in your hand and add to the shaker. Add the bourbon, lemon juice, maple syrup, and ice to above the level of the liquid and shake vigorously for 15 seconds. Strain mixture into rocks glasses with ice and garnish with remaining rosemary sprig. The High Plains cheddar is a unique hybrid - an Alpine cheddar inspired by Swiss Mennonite roots. The resulting block is surprisingly sweet and nutty, balancing subtle grassy notes that linger on the palate.
