About the Winery

During a career spent in Media, Gerry McSharry spent many happy years entertaining friends and prospective clients in some of the world’s finest restaurants. Whilst building his business, he developed his love affair with fine quality wines and a lifelong interest in Oenology. Upon his retirement from Media, Gerry, along with his son Paul, started a wine importation business in Ireland. They developed a small, but exquisite portfolio of boutique international wines previously unavailable in Ireland.

Paul, however, held a wider dream of being in the Winery, working in the Vineyards and learning the complete craft of winemaking. In 2009, he traveled to the Napa Valley and was able to make that dream a reality. He found himself in the extremely fortunate position of meeting and working alongside celebrated Winemaker Mark Herold, and there, between Paul, Gerry and Mark acting as consultant, MAZE Wines was born. The inaugural vintage saw only 220 cases of MAZE Cabernet Sauvignon produced, and slowly but surely, production has grown over the years to include a single vineyard Sauvignon Blanc from Knights Valley and the extremely limited production CLEW from two small vineyards in Coombsville.


About the Wine

100% Cabernet Sauvignon from Stagecoach Vineyard, Napa Valley; aged in exclusively 100% French Oak. Intense aromas of black fruits – black cherries, blackcurrants and black plums, followed by discrete notes of tobacco, dried wild flowers, and in the background star anise and winter spices. Rich mouthfeel of dark berries, roasted nuts and dark chocolate. This wine has seamlessly integrated oak, and its balanced acidity and smooth, structured tannins, extend into a long, lingering finish. Drink now or age for 12+ years. Just under 600 cases produced.

“From the Stagecoach vineyard, the 2015 Cabernet Sauvignon is 100% Cabernet Sauvignon aged in 100% new French oak. Very deep purple-black in color, it comes charging out of the glass with boisterous crème de cassis, black cherry compote and blueberry pie notions with hints of fruitcake, potpourri and aniseed plus wafts of dried herbs and black soil. Big, rich, full and seductive with bags of spicy black fruit preserves layers and a plush texture, it finishes with a lovely menthol lift. 565 cases produced.”–94 Points, Wine Advocate

About the Winery 

Working out of a humble 60’ by 10’ winery, Chris Camarda launched Andrew Will Winery (named after his son Will and nephew Andrew) with the inaugural 1989 vintage, and he has spent the last three decades producing some of Washington’s most well-respected wines. In 2013, Chris was joined by Will who is now in charge of the winemaking, but the focus has not changed: structured, elegant, and age worthy, the wines reflect a singular voice that has never adjusted to chase scores or suit trends.

Although always a focus, Chris’ attention to terroir has only intensified over time. His initial releases were single variety wines, but since 2001 he has focused blends for the single vineyard cuvées, as he feels this expresses the vineyards more clearly than a one-variety bottling. Chris and Will source from four of the best sites in Washington State, all planted to Bordeaux varieties: Champoux Vineyard and Discovery Vineyard in Horse Heaven Hills AVA, Two Blondes in Yakima Valley AVA, and Ciel du Cheval on Red Mountain AVA. The fruit is harvested all by hand. All of the wines are treated more or less the same in the cellar. All fruit is 100% destemmed, fermented with native yeasts in stainless steel tank, and aged in mostly neutral French oak with 25-35% new depending on the vintage and wine.

About the Wine

The team at Involuntary Commitment believe that with so much such great fruit coming out of our vineyards it would be shame not to spread the wealth. This medium body wine exhibits a dark garnet color with a bouquet of dark fruit, herbs, earth and hints of tobacco. On the palate, flavors of cherry, red currants and spices shine through. This wine is fresh, youthful and ready to drink, though will cellar nicely through the next 5 years.

Cocktail Recipe of the Week: 

Pomp and Circumstance 

Ingredients:

4 ounces Duc de Romet Brut Prestige Champagne

1 Sugar Cube 

2-3 Dashes Angostura Bitters 

Lemon Twist, for Garnish

Directions:

Place a sugar cube in a chilled champagne flute, lash it with 2-3 dashes of bitters, and fill the glass with champagne. Squeeze a lemon twist on top, and then use as garnish. Cheers and Enjoy!

Snack of the Week:

Murray’s St. Marks 80g in Crock

In the spirit of St. Mark's Street, Murray's has taken a beloved traditional cheese and given it an avante garde spin. This complex, unctuous cheese is fragile—kept it safe in a little red terra cotta crock. So cute. Plus, the crock helps St. Mark's double as a perfect, personal fondue. Top with some fig jam and walnuts—or be a purist and leave it as is—and pop the cheese in the oven for a few minutes. It will get oozy, melty, and glorious. Scoop up the creamy goodness with crusty bread for the perfect fall/winter treat. Pair with Beaujolais, or a crisp ale, and some Village swagger.
