About the Winery François Chidaine worked alongside his father Yves for many years before setting out on his own in 1989. Convinced of the potential of the teroirs of Montlouis and Vouvray, he purchased assorted parcels and expanded the estate to today's total of 30 hectares of Chenin Blanc, many of which are dominated by old vines of 40 to 80 years of age. During these years of growth, Chidaine earned a reputation as a leading natural viticulturalistin the region. At the Domaine, François is a true champion of the Chenin Blanc grape and touts its ability to produce vibrant wines that age gracefully. He is happiest in his vines, but being among his barrels is a close second. In many circles, François is as respected a vinifier as he is a vigneron.
About the Wine Certified Organic and Certified Biodynamic, the Les Bournais is overlooking the Loire river. Chidaine believed it to be one of the very best sites in Montlouis, and planted vines here in 1999. Unlike most of Montlouis, which is on clay and silex soils, Bournais is situated on clay and limestone soils, and the name Bournais refers to the specific type of limestone found in this vineyard site. Hand harvested, this wine is vinified in stainless steel with indiginous yeasts. Afterwhich, the wine is aged in both tank and used demi-muids. Chidaine’s goal is to vinify this dry and the result is a rich, full-bodied wine, probably the closest to Vouvray in profile of all of his Montlouis wines. About the Winery Situated in the splendid area of Northern Montalcino close to Biondi Santi's Il Greppo and our very own La Serena, the wines of San Filippo are age worthy and elegant, though very approachable in their youth. The estate totals 22 hectares, 11 of which are under vine dedicated mostly to Sangiovese. Founded in 1972, the estate was recently purchased by Robesto Giannelli who restored and renovated the entire facility. With the help of Paolo Caciorgna, Roberto is producing 2500 cases of Brunello aged in Slavonian and Allier oak casks each year, as well as 800 cases of a delicious Rosso di Montalcino aged 6 months in used barriques and large casks. About the Wine The sangiovese vines for this wine are situated on clayey, calcareous soils with shale and fossil fragments. After harvesting on the first ten days of October, the wine is fermented in stainless steel. The secondary fermentation is then done in vats of cement, stainless steel, and wood. Afterwhich, the winery employs oak for ten months of ageing and further aged for four months in bottle. When poured, hues of ruby red shine throughout the glass. Aromas of red cherry and sweet spices jump out of the glass and mingle with the senses. On the palate this wine is full yet balanced with well-integrated tannins and silky texture. A nice, persistent finish. Approximately 1,660 cases produced for the vintage. * * * Cocktail Recipe of the Week: Lemon Drop Ingredients: 50ml Our New York vodka 1 tbsp white caster sugar zest of ½ lemon 25ml triple sec 25ml lemon juice Directions: When life gives you lemons, just add Our Vodka: Lemon Drop is our cocktail this week, a sweet and sour drink easy to prepare at home: Put 1 martini glass in the fridge to chill. Mix 1 tbsp white caster sugar with the finely grated zest of ½ lemon, set aside. Pour 50ml Our Vodka into a cocktail shaker and add 25ml triple sec, 25ml lemon juice and a handful of ice. Shake really well until the outside of the shaker feels cold. Dip the rim of the chilled glass in water, shake off the excess then dip into the sugar and zest mix. Strain the contents of the shaker into your prepared glass. Cheers and Enjoy!

Eleven years later, he, in turn, sold it to his brother, Clarence, the present owner. Starting work at 6 am, all 13 employees do various jobs so no one is twisting, etc. all day long.
