Richard Luftig, a sommelier and wine buyer in New York City, saw there was a space in the restaurant market for California Cabernet at reasonable price by the glass. Luftig wanted to create a brand that he would be proud to serve. He sources his Cabernet from some of Sonoma County’s vineyard sites: such as Aunt Cathy’s, Nimble and Grable. His team farms collaboratively with the proprietors of each of these single vineyards. Everything is picked by hand and fermentation is native, long and slow. Richard meticulously selects different barrels for the aging of each wine. About the Wine The 2015 Pied à Terre Cabernet Sauvignon has fine aromatics, layers of fruit and a persistent energy. The 2015 vintage in Sonoma was the first year the drought impacted the fruit. The berries were naturally concentrated, with a high skin/water ratio. The intense fruit produced powerful, concentrated wines. After a meticulous harvest, the wine was aged exclusively in French wood, though less than 20 percent of the barrels were new. Aromas of cherries, violets and pencil shavings with supple texture and great length. Despite the richness and intensity of the vintage, the wine is still elegant and fresh, with mature tannins. About the Winery In 1720 the MONNIER family established their domaine in Meursault. The domaine is composed of 42 acres, it is one of the rare wineries of the “Cote de Beaune” region producing both red and white wines and they are equally adept at the production of each. Rich in experience, Jean-Claude and his son Nicholas Monnier honor the knowledge and experience left by their ancestors and uphold these traditions whenever possible. They continue with care and love, making wines in the cellar that are classicly and authentically Burgundian. No matter what appellation – Meursault, Puligny- Montrachet, Volnay, Pommard or Beaune, their wines are above all a product of the terroir and of a winemaking approach that seeks to showcase each individual parcel or vineyard with a minimum of intervention. About the Wine Situated on a bed of a mixture of limestone and clay; the vineyard is 1,150 feet above sea level. With an average vine age of 40 years–harvest by hand, pneumatic crushing, traditional vinification. After harvest, the wine is fermented about 10 days in tank and then Burgundian oak barrel maturation for about 11 months. When poured, deep red and very intense hues. The nose is powerful and intensive with aromas of blackcurrant, musk and game meat. On the palate similar aromas, good acidity and smoot to the finish.
